This is a tiny fully washed lot of the now famous “Pink Bourbon” variety (or Rosado as it’s now being called), grown in Quindio, Colombia. Genetic testing revealed that this variety is in fact unrelated to bourbon, and is instead an Ethiopian landrace.

This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.

With this offering we wanted to 1. showcase this wonderful variety in its “purest” washed form and 2. contrast with its co-fermented counterpart which we brought in at the same time.

This coffee is clean, sweet and bright with notes of sugarcane, meyer lemon, lemongrass and dark chocolate. Wonderful, wonderful coffee.
